Buffalo Chicken Salad

1 lb boneless, skinless chicken breasts
olive oil cooking spary
1 tsp smoked paprika
1 tsp chile powder
1/4 tsp sea salt
1/2 cup sweet onion, chopped, about 1/2 cup
1/2 cup nonfat plain greek-style yogurt
5 tbsp low fat buttermilk
1 to 1 1/2 tbsp all natural hot sauce
1 head romaine, lettuce, thick spines removed, chopped
1 head red leaf lettuce, thick spines removed, chopped
1 yellow bell pepper, thinly sliced
1 pint grape tomatoes, halved
1 cup peeled and shredded carrots
2 oz blue cheese, crumbled (about 1/2 cup)

Preheat broiler to hight. Place chicken on a baking sheet coated with cooking spray. Lightly mist chicken with cooking spray and sprinkle evenly on both sides with paprika, chile powder and salt. Broil 6-8 inches from heat until center of chicken is no longer pink, about 6 minutes per side. Transfer chicken to cutting board and let rest for 3-5 minutes before cutting into bit-size chunks

In blender, pruee onion, yogurt, buttermilk and 1 tbsp hot sauce. Taste and add remaining hot sauce if you want more heat. Divide romaine and red leaf lettuces among 4 places and top with bell pepper, tomatoes, carrots and chicken, dividing each evenly. Serve yogurt mixture on the side or drizzle evenly over each plate. Sprinkle with blue cheese and serve immediately. CE mag

Now I had this last night for dinner. I am most defiantly lactose intolerant. With just this little bit of lactose in these ingredients I woke up to a very sore tummy. I started getting uncomfortable about 15 minutes after I ate. So no dairy for me, unless I can find something that sets well. I don't think I can!

Crustless Breakfast Quiche

2 cups chopped mushrooms
3/4 cup chopped roasted red peppers (from jar squeezed of liquid)
1/2 cup chopped artichoke hearts (in water, not marinated) squeezed of liquid
1/2 cup finely chopped green onions
1 tbsp olive oil
Liberal sprinkling of Italian Seasoning
6 eggs, lightly beaten
1 1/2 oz goat cheese
1/2 oz grated parmesan

Preheat oven to 350f
In large skillet on medium heat saute mushrooms, red peppers, artichoke hearts and onions in olive oil and seasoning until soft and warmed through. Place mixture in a round cake pan, or divide in 4 large ramekins, either misted lightly with cooking spray. Cover with eggs and add goat cheese in small drops before sprinkling with Parmesan. **May need to salt eggs before adding.

Cook 25 minutes or until set.

Chained to the kitchen

Really I've just been avoiding the mountain of laundry strewn about the house. lol. I hate laundry so I've been cooking all day long. So far I have made


Breakfast Quiche 168 calories in each, I will post later, a very good P3 choice

Fried a pound of Bacon for breakfast for the boys this week. I put it in a bowl and then pop about 7 pieces in the microwave at breakfast for 1 minute for them to have with eggs.

Made almond pancakes with strawberry and cream topping for the boys, 'T' gobbled them up.

Made 7 half pints of no-sugar strawberry syrup. I water bath canned them for 10 minutes and did not cook as long so I got a syrup instead of a jam. I used 8 cups of strawberries, 1 1/3 cup of water and 1/4 tsp of sweetzfree. It is still warm, I'm hoping it firms up just a little bit more.

I made Italian Ziti for my 25 yr old son. He lives alone and I made it to take to him when I pick him up at 5. It really looks goooood, but that is a big NO NO right now.

Made a Buffalo Chicken salad for dinner, 260 calories in total. The old recipe was 1120 calories and I used greek yogurt with onions, buttermilk and hot sauce to do the dressing. I will post that as time permits.

I'm getting the boys lunches ready for tomorrow, they are going to have Chef Salads, so I just cut up extra romaine, iceburg, kale, cukes, red pepper,  tomato and onions in a big pot. I'll use that as a base for the Buffalo salad tonight and their Chef Salads in the morning.

Wow, it seems like I should have more food done, I've been going at it all day. I did clean the fridge out and pulled it totally apart so that took a good bit of time.

Tonight is some sort of Wrestling Show, Money in the bank or something. It's the WWE and my boys love it so I ordered it for them because they have been so very good about the new way we are eating in our house. 'T' is still in ketosis so I know he hasn't been cheating. I am allowing 'S' to eat what he wants, he needs some extra weight and does not have insulin issues, as long as he is part of the team and doesn't give his brother a hard time he gets rewarded too. It's nice to have everyone working together to get 'T' where he needs to be weight wise. I hope my boys learn life long lessons about food. It just donned on me that my kids have not had soda pop in 7 weeks and have not asked for it once. They have been drinking water and I just introduced them to green tea with sweetzfree, he loved it!

Neither one of them liked the smoothie shake I made last night, but I put about 2 oz in paper cups with a Popsicle stick and froze them. They did not connect the two and gobbled up the freezes for snack. 'S' went to the fridge freezer for another one and scoffed that I didn't have any, I said they are in the chest freezer, he happily helped himself to another one. tee hee I tricked them. That recipe is on my blog under April posts.

Results

Today I took my last shot at 6:30 a.m, I weighed in at 155.6 I am still TOM so may have some water retention. My low weight 3 days ago was 154 so I think I may have a few pounds of water.

Berry Smoothie

Ingredients

1 C (8oz) Greek Yogurt
1/2 C fresh or frozen strawberries
2 ice cubes (optional)
1/4 Cup heavy whipping cream

Preparation

Place all ingredients in blender and blend until smooth.  If using frozen fruit, omit ice cubes.


I have not figured out the calorie content of this smoothie yet. They had about 2 oz of it and I froze the rest in small paper cups with Popsicle stix so they can have a frozen yogurt after school or anytime. I will enter the ingredients and come back and post the nutritional info.

Shrimp Taco's Low Carb

4 Low Carb Shells (see flaxseed tortilla recipe)
6 oz Shrimp, detailed and deveined
4 oz Goat Cheese
1/4 Cup Roasted Red Peppers
1/4 Cup sliced olives
1 tsp fresh basil chopped
1 tsp EVOO

Mix shrimp, cheese, peppers, olives and basil in medium bowl. Place shells on parchment paper on a cookie sheet, spoon even amounts into each shell, fold shell over and brush with small amount of olive oil. Bake in 450 oven for 6 minutes. Cut tacos in half. Two halves is one serving.

Net Carbs 4.5 for store bought tortillas (If you are using the flaxseed tortilla recipe there are zero net carbs)

These are delicious. I was completely satisfied with one taco (yeah, I went off protocol again). The only thing I will do differently is to dry the shrimp well. The tacos were a little too wet due to the water content in the shrimp.

The weight I am on 4/3/2011 will be my set weight. I take my last shot in 12 hours, I will weigh in as soon as I get up and take my last shot. I am sort of disappointed I did not make my goal, but I am relieved that I will be taking my last shot and be going on to P3 (phase 3). I will go for 3 weeks on no starch no sugar. I am completely prepared for this phase. I have ordered and received the sweetzfree, have stocked my pantry with flaxseed flour, almond flour and wheat germ gluten free flour. I am armed with a large stock pile of recipes from searching online and my favorite magazine. This magazine has terrific recipes that gives you all the calorie, carb and nutritional content. It takes favorite staple foods and makes them figure and heart friendly. I just love it!

I purchased Julia Child's DVD's on French Cooking, and will be making Boeuf Bourguignon. I have watched her make it twice and have all the ingredients, it's perfect for P3, of course I will not have the traditional new potatoes or french bread as a side. I will have my favorite red wine and a big salad. That is going to be an awesome night. My first recipe from Julia and my first P3 meal. I am going to be doing a lot of cooking from those videos as well. My kids, hopefully will enjoy them, 'S' has been helping me with the new recipes and I'm sure he will love to learn to cook French meals. He claims to want to open a restaurant when he's older so this will be the true test for him. Cooking is hard work and very time consuming. I'm not sure how I'm going to be able to keep a full time job and get all three meals on the table plus 2 snacks. It will happen, I'm that determined. Actually I made the boys a shake about 20 minutes ago. I'll post that recipe along with the shrimp tacos.

Flax seed Meal Tortillas

I looked the internet over for this recipe, I had to dig deep and I'm not even sure now where I found this recipe. Most of them called for store bought tortillas and then bake them for chips. Well this one is from scratch and is no carb at all. The dietary fiber count is 3.5 grams and the carb count is 3.5 grams so it is a zero net carb shell.

Flaxseed Meal Tortillas

2 eggs, beaten
3 Tbs. flaxseed meal
1 Tbs. psyllium husks
1 tsp. baking powder
pinch of salt
pinch of any seasoning you want:
onion powder, garlic powder, dried chives
water..if you need it

Mix all the above ingredients together.Let set for about 5 minutes. It should be like pancake batter..If it gets too thick, then add some water.

Then spread a couple of Tbs. on some parchment paper
on a microsafe plate and make a large circle..pretty thin.

Microwave it for 1 minute or so..Then peel off.


Now a word of caution, these shells do not peel off the paper easily AT ALL. I gave up doing them in the microwave and used a cast iron skillet with olive oil. It worked perfectly. There is a t
rick to getting the batter spread, but I found a spatula worked best for me. Also I added one step and made tortilla chips to use for guacamole dip, a Greek yogurt dip recipe or whatever other dip you choose. 


I cut the tortillas in eight pizza shaped pieces and baked in a 350 degree oven for 8 minutes. They were pretty good, but you have to eat them in one sitting or put them back in the oven to crisp back up.

I wanted to post this before the shrimp tacos because the tortilla shell is great to use and you will get zero carbs from the shell, you can buy the low carb shells if you prefer for that recipe. It will follow soon.

One more shot

Tomorrow will be my last shot day. I'm pretty happy about that! I have only 4 VLCD left. I have not really been following protocol yesterday or today. I made vegetable soup and I have no idea how many calories are in it. I do know not more than 200 per serving because I did log that on a calorie count site before. I'll have to go check it out. I have lost 27.5 lbs, I didn't lose anything this morning, but my guess is the 5 vodka and water drinks I had at the diner last night are to blame. YIKES I do love my vodka. Wait that is not entirely true. It was 3 vodka/waters at the diner, and 2 glasses of Pinot Grigio at the Grille.

'D' and I went out and had steak, I didn't go over my allowed 3.5 oz and had lettuce salad with ACV, but somehow the words 'Pinot Grigio' just slipped out. Then I figured I'd had one glass what the hell, I had another. It was delicious. Some of the girls on a forum said wine tasted funny to them, but it was simply a little taste of heaven for me!!!

On the kiddo side of things; 'T' was been doing high fat, low carb since Monday, I have not counted his calories at all. I give him bacon and eggs for breakfast, all sorts of fatty dressings, cheese, nuts for lunch and dinner. I do give him 100% whole wheat bread no sugar addes with butter, and he even had a grilled cheese sandwich for lunch one day with provolone and Colby cheese and 2 tbs of butter to toast it. That was in Thursdays lunch. This was recommended by a good friend. So I put T on the scales this morning. He has lost 4.5 lbs in 5 days. Pretty stinkin impressive I think. I am going to get him an appointment to get his blood glucose and A1C done. I'm really worried he may be on his way to Type 2 diabetics if I don't get his diet under control. I have been busting my hump getting all his meals prepared from scratch.

I am making him shrimp tacos tonight. I'm going to post the recipe. I want to try to post all my recipes here, in case someone is in the same boat I am in with an overweight child. Maybe this will help someone else, my friend 'L' has helped me for sure.

After 4/6/11 my first day on P3 I am going to post all my starting weight and measurements and the final pounds and inches lost.

Low Carb Pizza


Cauliflower Pizza Crust
1 cup cooked riced cauliflower
1 egg
1tbs butter
1 cup mozzarella cheese
3 tsp Mrs. Dash Garlic and herb seasoning
pizza or alfredo sauce > I can my own pizza sauce but if you don't get no sugar added sauce.
toppings (make sure meats are cooked)
mozzarella cheese

Mix cauliflower, mozzarella cheese and eggs in medium bowl, press mixture down on greased pizza or cookie sheet with 1 tbs of butter. Evenly cover crust with Mrs. Dash. Bake in 350 oven for 12-15 minutes, for a double recipe bake for 15-20 minutes.

Top pizza and put back in oven on broil just long enough to melt cheese. You may want to heat your sauce before spreading on pizza. I don't use sauce on my youngest son's part of the pizza, he doesn't like it, so he gets cheesy pizza bread.

Riced Cauliflower
1- 16 ounce bag frozen cauliflower > I use only a fresh head of raw cauliflower it rices very easily
I use a 2-qt covered dish and microwave the cauliflower (Don't add water) until it is cooked, 8 minutes. Using mitts, carefully pour water from the cauliflower. Allow to cool with lid removed. With raw cauliflower I used water, and drained very well for 10 minutes.

Cauliflower can be riced in several ways.
1. Food processor
2. Santoku knife
3. Using a cheese grater
4. Using a ricer
Store covered and refrigerated until use.
Note: You can use a head of raw cauliflower to make your riced cauliflower. Simply process/rice the head prior to cooking in the microwave.
Makes approximately 3 cups riced.
Serves 6.

I doubled this recipe and it made a 8x14 inch rectangular pizza. I used sandwich pepperoni. Enjoy and don't tell anyone your secret until after they taste it. I told my 15 yr old after he ate it and when he found out if was cauliflower he said "I'm not eating it" this was after he said how good it was.

Second Nature

I never thought for a minute in the first, second and even third weeks of this diet that I would say this.

I have been planning my first non VLCD meals, the first day after completing P2 will be 4/7/11. I think I posted in this blog about what I was going to eat. At this point and time I really don't crave those meals any longer. I suppose I will eat eggs and bacon for bfast, but the whole planning of that day is no longer on the forefront of my mind. Eating was something I looked forward to, it was something to do while bored, or depressed, or pissed. I planned food for all special occasions. Now eating and food is something I only think about when it's time for my body to use as fuel. I have no desire for sweets, I did find a sweetener that I feel is the best choice health wise for my kids and husband, but I don't feel the need for cake, pie, doughnuts or any other sweets.

I enjoy cooking but don't feel the need to eat what I cook. I know that if I would start eating sugar sweetened products I would again begin to crave them. I know that I will indulge in sweets again, but it will be sweets that I make using low carb flour alternatives, and the new sweetener I have purchased. I am going to make strawberry jam with my sweetener this weekend. It came in the mail on Wednesday and I can't wait to do my jam!

I lost another .60 of a pound yesterday. I am now averaging .90 a day for the last 4 days. Cutting out fruit and adding those calories in fat has really proven to work for me. I am so satisfied now that I don't think about food, as I know I've already mentioned. I even forgot my shot this morning. CAN YOU BELIEVE THAT, I never ever ever thought I would forget to take my shot, it's just not on my mind anymore. I did go back home at lunch and take it after I remembered I had forgotten <That's an oxymoron for ya!!! tee hee

I am going to post my recipes in separate blog posts. I think it will be easier to link them. First is the delicious no-carb pizza, but don't tell your kids what's in it, they won't eat it because it's cauliflower! Yes if you've never had a pizza made with riced cauliflower crust you are in for a real treat!
